Ingredients list for masala khichdi recipe

  • Rice – 1/2 cup( wash and soaked for 10-15 min)
  • Green moong dal – 1/4(wash and soaked for 10-15min)
  • Ghee or oil – 2 tablespoon
  • Cumin seeds (jeera)-1 tablespoon
  • Asafoetida (hing) – a pinch
  • Green chilli – 3-4 fine chopped
  • Ginger & garlic paste -half tablespoon
  • Onion – 2 medium size ( sliced )
  • Tomato – 1 large (chopped )
  • Carrot – 1/2 cup ( chopped )
  • French beans – 1/2 cup ( chopped )
  • Potato – 2 medium size( chopped)
  • Capsicum ( shimla mirch) – 1 medium size (chopped)
  • Peas ( matar )- 1 cup
  • Cauliflower – 1 cup ( chopped)
  • Coriander leaves – for garnish
  • Red chilli powder – 1/2 tablespoon
  • Salt – according to taste
  • Turmeric powder – half tablespoon
  • Coriander powder – 1/2 tablespoon
  • Dried red chilli – 2
  • Bay leaf (tej patta) – 1
  • Black pepper ( kali mirch) -3-4
  • Clove (long) -2-3
  • Water – 3-4 cups (adjust based on desired consistency)

Method for prepare the masala khichdi recipe

  • To make masala khichdi recipe , place a pressure cooker on the stove and add oil or ghee.
  • When the oil is hot, add cumin seeds, dried chilli ,tej patta, kali mirch , clove and asafoetida (hing).
  • When all the whole spices start to splutter, then.
  • Then, add ginger-garlic paste and cook it for 1 minute.
  • Then add green chili and chopped onions, and sauté until the onions are lightly golden.
  • When the onions turn light brown, add chopped tomatoes and some salt.
  • Cook until the tomatoes become slightly soft.
  • Then, add all the vegetables (after washing them) into the cooker and mix well.
  • Cover and cook for 1-2 minutes.
  • Now, we’ll add the spices: red chili powder, coriander powder, and turmeric powder.
  • Mix the vegetables well with the spices and cook on low flame, covered, for 5-6 minutes.
  • Now, add the soaked rice and dal to the cooker and mix well.
  • Cook for 1 minute, then add water and mix again.
  • Close the cooker lid and cook until you hear 3-4 whistles.
  • After that, turn off the heat and let the pressure release on its own.
  • Once all the pressure is released, open the cooker.
  • Add fresh coriander leaves, and mix the masala khichdi well.

Your hot masala khichdi is ready to serve with a dollop of ghee, yogurt, or papad.
