Soft and Spongy Dhokla Recipe

Ingredients For The Dhokla Recipe:

For The Dhokla Recipe:

  • 1 cup gram flour (besan)
  • 1 teaspoon sugar
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon turmeric powder
  • 1 teaspoon ENO fruit salt or baking soda
  • 1 cup water

For Tempering:

  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 2-3 green chilies, slit lengthwise
  • 8-10 curry leaves
  • 1 teaspoon sugar
  • ½ cup water
  • 1 tablespoon lemon juice
  • Fresh coriander leaves, chopped (for garnish)

Method For Prepare Dhokla Recipe

  1. Prepare the Batter Of Dhokla Recipe:

  • In a mixing bowl, add 1 cup of gram flour (besan) to remove any lumps.
  • Add salt ,sugar  and turmeric powder. Mix well.
  • Slowly add water (around 1 cup) and whisk continuously to make a smooth, lump-free batter. The batter should be of medium consistency, neither too thick nor too runny.
  • Add 1 tablespoon lemon juice , 1 table spoon oil and mix again.
  • Let the batter rest for 10-15 minutes for the absorb moisture.
  1. Prepare the Steamer:

  • While our dhokla is resting, we will prepare the steamer. For that, take a bowl and grease it well with oil on all sides.

  • In a steamer or large pot, add about 2 cups of water and bring it to a boil. Place a stand inside so the dhokla tray doesn’t touch the water.
    1. Add ENO and Steam:

    • Just before steaming, add 1 teaspoon of ENO fruit salt or baking soda to the batter and mix gently. As you stir, you’ll see bubbles form, making the batter light and airy.
    • Immediately pour the batter into the greased tray and spread it evenly.
    • Place the tray in the steamer and cover with a lid.
    • Steam on medium heat for about 15-20 minutes or until a toothpick  inserted in the center comes out clean.
    1. Prepare the Tempering( Tadka):

    • While the dhokla is steaming, prepare the tempering (tadka).
    • Heat oil in a small pan. Add mustard seeds and let them crackle.
    • Add sesame seeds, slit green chilies, and curry leaves. Sauté for a minute.
    • Add ½ cup water, 1 teaspoon sugar, and 1 tablespoon lemon juice to the tempering and let it come to

      a boil. This sugar-lemon-water mix will keep the dhokla moist.

    1. Add Tempering to Dhokla:

    • Once the dhokla is steamed, remove it from the steamer and let it cool for a few minutes.
    • Cut the dhokla into squares or diamond shapes.
    • Pour the prepared tempering evenly over the dhokla pieces, ensuring the water mixture soaks into them.
    1. Garnish and Serve:

    • Garnish with fresh coriander leaves.
    • Serve the Dhokla warm or at room temperature with green chutney.
