Chawal Ki Kheer Recipe: A Classic Indian Dessert

Ingredients list for chawal ki kheer
- Short grain rise : 1/4 cup (washed and soaked for 15 minutes)
- Raw Milk : 1 liter (full-fat for a creamier texture)
- Sugar: 8-10 table spoon (adjust to taste)
- Water : 1cup
- Cashew (kaju) : 8-10
- Almonds (baddam) : 8-10
- Raisins (kishmiss) : 8-10
- Saffron Strands: A few (optional, soaked in warm milk)
Method for prepare chawal ki kheer
- To make Chawal Ki Kheer, place a pot on the gas and add water to it
- Now add milk to it.
- Now let the milk come to a good boil.
- After the milk has boiled, add the washed and soaked rice into the milk.
- Now keep stirring it continuously on low flame, making sure the kheer doesn’t burn.
- After 20-25 minutes, the rice will start to cook.
- When the rice is partially cooked, add the dry fruits that we prepared earlier.
- Continue stirring even after adding the dry fruits.
- Now, add a little saffron to 1 cup of warm milk and set it aside for 5 minutes.
- After 5 minutes, the saffron milk is ready. Now add this milk to the kheer.
- Then mix it well with the rice kheer.
- Now, check the rice; if it is fully cooked. Then add the sugar. If not, let the rice cook a little longer before adding the sugar.
- Once the rice is cooked, add the sugar and cook it on medium flame for an additional 5-7 minutes.
- Our rice kheer is now ready.
- Let the kheer cool slightly before serving. It can be served warm or chilled, depending on your preference.
- Garnish with additional sliced almonds, pistachios, and a few saffron strands before serving.
