suji :250 gram
sugar : 1 cup (adjust according to taste)
Ghee :2 cup
Water :2 cup
Cashews (kaju) :8 – 10 ( chopped )
Almonds (badaam) :8-10 ( chopped )
Cardamom (ilaychi) :2-3 (crushed)
raisins ( kishmiss): 4-5
Gram flour : 1 tablespoon
saffron strands (kesar) : A few (optional, for color and aroma)
Method for prepare suji ka halwa recipe
1. Roast the suji:
- Heat ghee in a heavy-bottomed pan or kadhai over medium heat.
- add cashews and almonds, fry them in ghee for 1-2 minutes until they are golden and aromatic.
- Remove the fried nuts from the pan and set them aside.
- In the same pan with the remaining ghee, add suji.
- Roast the suji, stirring continuously, until it turns golden brown and releases a nutty aroma.
- This should take about 5-7 minutes. Be careful not to burn it.
- Add 1 spoon of besan (gram flour) to the suji and mix it well.
- Continue cooking until the suji releases ghee and the mixture is well combined.
2. Add water:
- Next, pour in water and mix thoroughly with the semolina.
- Cover the pan and cook for 1 minute.
3. Add sugar and flavorings:
- Once the semolina is cooked and the mixture is thickened, add the sugar.
- Stir continuously until the sugar completely dissolves and the halwa reaches a pudding-like consistency.
- Add chopped cardamom , saffron strands (if using), and the fried chopped nuts and raisins.
- Mix everything thoroughly cover and cook for an additional 2-3 minutes.
4. Finished and served:
- If you’re using chopped coconut, stir it into the halwa at this stage.
- Remove from heat and let it sit for a few minutes to cool slightly.
- Serve warm or at room temperature, garnished with extra nuts and a sprinkle of cardamom powder if desired.
